53 Video Recipes!


So one of the very cool things that has happened since “All Star Academy” on Food Network, is that John Soules Foods, a meat company out of Austin Texas enlisted me to come up with 53 recipes for their product!  Now the cool thing, is that John Soules Foods makes Antibiotic  Free, Steroid Free, Hormone Free, Gluten Free pre-cooked and frozen specialty meats like Beef or Chicken Fajitas, Angus Beef Steak, Rotisserie Chicken, etc. etc.  And they found that much of their target audience was basically putting their meat inside a tortilla and calling it a day.

Therefore the question was raised, “Lee…what could you do with our meat?”  ….and boy did I have a great time!  We did things like Steak Benedict with Habanero Hollandaise, Mini-Shepherds Pies, Chicken Cordon Bleu in a Filo Roulade, Argentinian Steak Salad, Asian Chicken Lettuce Wraps, Mexican Chicken Piccata, Surf ‘n’ Turf Pasta, and the Tomatillo Chicken Tacos with Spicy Banana Salsa featured here…and the list goes on and on.  The goal – about 3o minutes to prepare and only about 15-20 ingredients.  Something ANYONE could rush home with the kids from Soccer practice, pull a package of JSF meat out of the freezer, and in 30 min have a tasty, nutritious meal for the family on the table.

So here was the really fun challenge….normally you would cook your proteins first, and add layers, sauces, as you go.  But in this case – the meat only had to be reheated.  So therefore…. how to get layers of flavor?  And YES….the answer was often with wine and beer :)
